Savory Tomato Fish Fillets

These fish fillets are delicious!  If you can't find canned diced tomatoes, just buy canned whole tomatoes and chop them coarsely.  This recipe works well with any mild white fish.  If you are using frozen  fillets, be sure to thaw them first.  I like to serve Savory Tomato Fish Fillets with rice and a green vegetable.

           

 

   

 

  Preheat oven to 450F/230C.

 

   

 

   

1 can (14 oz)

  1 can (398 mL)

diced tomatoes, drained

  Spoon half of the tomatoes

 

   

 

  into a baking dish.
           

1 lb

  500 g

fish fillets

  Arrange on top of the

 

   

 

  tomatoes.

 

   

 

   

 

   

salt

  Sprinkle over the fish.
     

pepper

   

 

   

 

   

 

   

 

  Spoon the rest of the

 

   

 

  tomatoes over the fish.

bread crumbs

  Combine.

2 Tbsp

  30 mL

dried parsley

  Sprinkle over the fish.

butter, melted

cloves garlic, crushed

   

 

   

 

   

 

   

 

  Bake until fish is opaque and

 

   

 

  flakes easily with a fork

 

   

 

  (about 20 minutes).
