Meat recipes -
hearty food prepared in a flash!



Many of us grew up believing that dinner had to include meat, potatoes, and a vegetable. Even though I now enjoy a more adventurous range of foods, I still look forward to a comforting meal of beef or pork as part of my varied diet.

If you are trying to eat a healthy diet, don't be discouraged - you don't have to eliminate red meat. Just eat it less frequently and in smaller portions than our grandparents' generation did. Nutritionists recommend that we eat no more than 3 oz (90 grams) of beef or pork per serving. That's about the size of a cooked hamburger or one pork chop.

Buy lean ground beef. Choose organic if that's an option where you live.

Choose the leanest cuts you can find. Lean cuts of pork are the leg, picnic shoulder and loin. Lean cuts of beef include flank, round, rump, sirloin and sirloin tip. (Make sure to remove all visible fat.)

Ground beef must be cooked until well done. Loaves and patties must be cooked until no longer pink inside. (For some reason, meatloaf always takes longer than I think it will! Give yourself some extra cooking time when making a new loaf recipe.)

If you do splurge on a huge steak dinner, don't despair - just be sure to include some vegetarian meals in your weekly menu too.
