Pasta salad recipes -
quick meals for hot days



When the weather turns hot, I turn to my pasta salad recipes. When the temperature soars, no one feels like eating a hot meal, but we still need a full meal. This is one of my favourites. It's light and refreshing, but full of filling and nutritious ingredients.

The beauty of pasta salad recipes is that they are so easily modified. I haven't specified any quantities in this recipe. Make enough pasta to feed your family, and then throw in enough of the other ingredients so that it looks tasty to you!


Pasta of your choice I often use macaroni; rotini and fusilli work well too. Cook according to package directions, till tender but not mushy. Rinse under cold water several times (especially if you are going to eat the pasta salad immediately).

Mayonnaise Add enough so that the pasta is well-coated.

Canned tuna, drained

Frozen peas I don't bother thawing these; the warm pasta and the hot weather will quickly thaw them.

Curry powder Add as much as tastes good to you!

Turmeric This powdered spice gives the salad a lovely yellow colour.

Mix everything together in a large bowl. Serve immediately, or refrigerate until you're ready to eat.

Of course, you can add other ingredients, omit some of these, and invent your own delicious pasta salad recipes.

I always make more than I'll need, because the leftovers make a great lunch the next day.
