Refried Beans

adapted from Moosewood Cookbook

Real Mom Prep Time:  12 minutes

3 Tbsp   45 mL

olive oil

  Heat in a large skillet.
           
2 cups   500 mL

minced onion

  Add to skillet.

cloves garlic, pressed

cumin

   

1 tsp

  5 mL

salt

   
     

pepper

   
           

 

   

 

  Saute over medium heat until

 

   

 

  onions are soft.

 

   

 

   

 

   

 

  Turn heat to low.

cans (19 oz/540 mL) pinto beans

  Add to skillet.

 

   

 

  Mix well.

 

   

 

  Mash beans with a fork.

 

   

 

  Cook for a few more minutes.

 

   

 

   

 

   

 

  Serve with rice, green salad,

 

   

 

  tortillas and salsa.
