Nutritionists say that we should cut back on our consumption of saturated fat - which means we should eat less red meat. Fortunately, there are enough tasty vegetarian recipes available that cutting down on meat isn't a hardship at all. By eating more meatless meals, you'll not only eat less fat and more fibre, but you'll cut down your grocery bill at the same time! I used to think that beans were tasteless and boring, eaten only by fanatics! Then I found some great recipes using beans, and I was hooked! Before I had children, I used to soak and cook my own beans. That is a very economical choice, and it actually doesn't take as much time as I'd thought. Now that time is an issue, though, I rely on canned beans. Many have added salt, so it's important to rinse them before using them. Eggs can be the basis of a delicious meatless meal. Like anything else, eggs should be eaten in moderation - not every day! If you are especially concerned about your fat intake or your cholesterol, avoid egg yolks. In many recipes, you can substitute one or two egg whites for one whole egg.
Whether you are a strict vegetarian, someone who wants to start making healthier choices, or just someone eager to try new foods, you'll love these delicious vegetarian recipes. All are quick meals, and all are easy to make. You may be surprised to find that you don't even miss the meat!
For those nights when you need supper on the table FAST, check out "Last Minute Meals". You'll find recipes for delicious complete meals - most of them meatless - that you can have on the table in 20 minutes! In a rush? Lentil Skillet Supper is quick and easy to prepare. This low-fat, high-fibre meal is a comforting hearty supper for a cold winter evening. One of my favourite vegetarian dishes is this Crustless Zucchini Quiche. It's surprisingly easy to make and always turns out perfectly. When you taste Tofu Feta Pie, you might think that it is a quiche - but it's actually made without eggs! It has a wonderfully sweet flavour. Bean and Tortilla Stacks are fun to make (get the kids to help) and fun to eat. Using canned beans makes preparation time minimal. For something completely different, try Vegetable Cheese Oat Cake. This complete meal-in-a-pan is hearty and flavourful. |
