Caribbean Black Beans

adapted from Moosewood Restaurant Cooks at Home

Real Mom Prep Time:  11 minutes

1 Tbsp   15 mL

olive oil

  Heat in a deep skillet.
           
1 cup   250 mL

chopped onion

  Add to skillet.

garlic clove, pressed

   
           
          Saute until onions begin to soften.

grated ginger root

  Add to skillet.
1/2 tsp   2 mL

thyme

   
           
     

 

  Continue sauteing, stirring, until

 

   

 

  onions are very soft.

  Add to skillet.

3/4 cup

  175 mL

orange juice

   
     

 

   

 

   

 

  Heat until thickens slightly.

 

   

 

  Mash a few of the beans.

  Serve over rice.
