Vegetable Nut Loaf

Real Mom Prep Time:  17 minutes

          Preheat oven to 350F/175C.
           
1/3 cup   75 mL

butter

  Melt in a large skillet.

 

   

 

   

1 cup

  250 mL

carrot, chopped

  Add to skillet.

1 cup

  250 mL

celery, chopped

  Saute until onion is tender.
1/3 cup   75 mL

onion, chopped

   
           

 

   

 

   

1/4 cup

  50 mL

flour

  Add to skillet.

1 1/2 cup

  375 mL

milk

  Cook, stirring, until thickened.

          Remove from heat.

  175 mL

wheat germ

  Add to skillet.

1 cup

  250 mL

cheddar cheese, grated

  Stir until cheese melts.
           
           

1 cup

  250 mL

walnuts

  Add to skillet.

  Transfer to greased loaf pan.
           

 

   

 

  Bake for 1 hour, or until set.
