Cranberry Snowballs


If you're looking for easy Christmas cookie recipes, try these delicious no-bake goodies!

They're easy to make, they look great on a plate of holiday treats, and they are delicious!

You can use either fresh or frozen cranberries. If you use frozen, you can thaw them, or not.

If you're in a rush, leave out the grated orange rind.

1 cup/250 mL cream cheese, softened

1 cup/250 mL graham cracker crumbs - or more

1 cup cranberries, chopped

1 cup raisins

2 tsp/10 mL grated orange rind

unsweetened coconut

In a bowl, mash and stir the cream cheese with a spoon until it is smooth.

Add the graham cracker crumbs. Mix well.

Add the chopped cranberries. Mix well.

Add the raisins. Mix well.

Add the grated orange rind. Mix well.

Using your hands, form small balls. (If the mixture is too sticky, add more graham cracker crumbs.)

Put some coconut in a small bowl. Roll the balls in the coconut.

Store in the refrigerator until serving time - or wrap well and freeze.
