Quick Easy Meals:
The fastest of the fast!

Sometimes you are in even more of a hurry than usual. You need quick easy meals that are extra fast!




The recipes on this page are some of the quickest ones I know. Rather than spending money on take out food, or stocking your freezer with overpriced convenience foods, or having cereal for supper, use one of these!

Save these recipes for those nights when you know you'll have no energy for cooking, but you still want to eat a healthy and delicious meal. You'll feel so virtuous, knowing that you are eating real food - and saving money - even on the most busy of days.

Tuna Celery Crunch is a quick meal. It's not fancy, but it's delicious, nutritious, and fast!

Fried Rice is a great way to use up leftovers - and it's delicious!

If you don't need to eat immediately, but you want a recipe that's quick to prepare, try Maple Pork Chops. I can have this one in the oven in less than 10 minutes. (It takes another hour to cook.) It's one of my family's favorite quick easy meals.

Another get-it-on-the-table-quick recipe is Mexican Skillet Supper. I can have this on the table in about 30 minutes - or less, if I happen to have leftover rice in the fridge.

Here's a meal that looks and tastes like it takes a long time to cook - but doesn't: Baked Fish with Creamy Dill Sauce. This takes less than 15 minutes of preparation, and as little as 15 minutes more to cook (depending on the thickness of the fish).

My favorite way to cook chicken is to mix together a bunch of tasty ingredients, pour them over the chicken, and bake. I can have Orange Chicken with Rosemary in the oven in 5 minutes! (It needs another hour to cook.)

Another pour-and-bake chicken recipe is Pineapple Chicken. I can have it in the oven in almost less time than it takes to type this description of it!

For a comforting quick meal, you can't beat a hearty bowl of soup with a good loaf of bread. Using red lentils lets you make Lentil-Spinach Soup in a flash. Or try this speedy Miso Soup.

For a quick lunch or light supper, have an Avocado-Cheese Melt.

Some nights you don't even have enough time to make these quick easy meals. On those evenings, you need the fastest of the fast!
