Lately I reach for pork recipes more often than I used to. One of my children has become a fairly picky eater, but he will always eat pork.




I've learned that pork is an even healthier choice than I thought it was.

Now that I have a stock of delicious options, we eat this tasty meat on a regular basis.

I cook pork in the oven, on the stove, or in a crockpot.

My number one tip about cooking pork is this: Don't overcook it! Cooks used to think that it had to be dry and tough in order to be cooked. That's not the case! Pork can be moist and tender and still be sufficiently done. Investing in a good meat thermometer is the easiest way to tell. The internal temperature should be 160F/70C. Depending on the cut, the meat may still be a bit pink at this temperature.

The exception to this is ground pork. Like any ground meat, ground pork - including sausages - must be cooked until well done, with no pink remaining.

Cut for cut, pork is as lean as any other meat. Despite what you may think, it has a comparatively low cholesterol content.
