My favorites!

Before I began collecting easy baking recipes, I was hesitant to learn to bake. I always thought that baking was mysterious and difficult, and that only skilled cooks could do it well. But now that I have my collection of tried and trusted favorites, I realize that baking is really a piece of cake!



I like making my own baked goods, rather than buying processed treats from the supermarket. Making my own has lots of advantages:

  • It's more economical.

  • It's healthier. (Just read the list of ingredients on a purchased bag of cookies and you'll see what I mean!)

  • It's better for the environment: no more packaging!

Now that I have a collection of easy baking recipes and I know how quickly and easily I can whip up a batch of cookies or muffins, we are eating better, spending less and enjoying it more! I feel like such a good mom when my kitchen smells of fresh baking!

All of my favorite easy baking recipes use healthy ingredients. I try to use healthier sweeteners like maple syrup, fruit or honey whenever possible. When a recipe really demands the use of sugar, I experiment to discover the minimum amount required to produce the taste and texture I want. I use only whole wheat flour, unless a recipe absolutely won't work with whole wheat.

All of these easy baking recipes are quick and easy to make and use common, easy to find ingredients. I don't have fancy baking pans or utensils.

Here are my favorites. Like all of the recipes on my site, these have been tested and approved by my family. Now that I love to bake, I am always trying out new easy baking recipes, so stay tuned for new ones!




Cookies

Sometimes (often, actually!) I just feel like having cookies! A cookie jar filled with homemade cookies makes me feel happy. Cookies are always welcome: in a lunchbox, for dessert, or for a late-night snack. Make a double batch; these delicious cookies go fast!

    These are just the thing when you are in the mood for a sweet snack, but don't have time to bake. They are also perfect for children to make by themselves.






Cakes

For a satisfying dessert, there's nothing like a good piece of cake. All of these easy baking recipes make cakes that are so moist and flavourful that they don't even need frosting! For a special occasion, you can frost them if you choose - or serve them with a scoop of ice cream or a dollop of whipped cream. Mmmmm!

Loafs

At about three o'clock every afternoon, my husband's family stops what they are doing and has a cup of tea and a "little something". Loafs and breads make the perfect "little something"!

  • Zucchini Bread is delicious! Since it is full of such healthy ingredients, go ahead and have a second piece!





Muffins

There is nothing like a batch of muffins baking in the oven to make you feel warm and happy all over! Muffins are quick to mix up, and quick to bake. They make a great lunchbox dessert, an after-school treat, or a "grab and go" snack. They are sturdy enough to take on a hike, but delicate enough to serve at a tea party. In short, they are a baked good for every occasion! Here are my favourites.






Scones

I always thought that scones were complicated and mysterious to make. I was wrong! Like everything else on this page, they are quick and easy. They too are perfect with a cup of tea.






Squares

I love eating cookies, but sometimes I don't have the time (or the inclination) to make them. It takes time to spoon the batter onto the cookie sheets and then to remove each baked cookie to a cooling. When I'm in more of a rush, I make squares. All I have to do is mix up the batter, pour it into the pan, bake, cut and eat!
