Healthy Breakfast Recipes


I'm so glad that I finally have a collection of healthy breakfast recipes and ideas. As my mother always told me, breakfast is the most important meal of the day. (You were right, Mom!)






Breakfast has always been a challenge for me.

As a child, I sat glumly in front of a bowl of cereal that I didn’t want to eat.

As a teenager, I grabbed a piece of toast and peanut butter as I ran out the door.

As a young adult, I didn’t eat breakfast at all and was headache-y and weak by lunchtime.

Now I’m the mom and I know how important a good breakfast is for getting my children – and myself! – off to a good start in the morning. A healthy breakfast gives us the energy we need to enjoy our day.

Fortunately, I have discovered lots of healthy breakfast recipes that we all enjoy.

Here are our favorites.


Breakfast Casserole Recipes

For a special holiday breakfast or brunch, what could be better than a breakfast casserole? You do all the work the night before. In the morning, just pop the casserole in the oven and relax. Soon your house will smell heavenly, and you'll be eating a delicious meal.

  • Make-ahead Eggs Benedict is much easier than I could have imagined! (This is for special occasions only! It's not a "healthy breakfast" - but it is a wonderful special treat!)

  • Ham and Cheese Strata is a complete meal in a pan.



Eggs

Eggs, eaten in moderation, can be part of a healthy diet. They are low in calories and contain many essential nutrients. Current research suggests that healthy adults can safely eat one whole egg per day without worrying about the high cholesterol content in eggs.

  • Fried Eggs are quick and easy to make. They're a good solution when you need a quick breakfast.

  • Both of my children have become pros at making Scrambled Eggs.

  • Soft Boiled Eggs are especially fun to eat if they are served in a fancy egg cup!



Egg and Bread

Hmmmm…. I have a loaf of bread and a carton of eggs. What can I make for breakfast?

  • If you also have some milk, you can make French Toast! It's one of our favorite breakfasts. It's very easy to make, it's filling, and it tastes great.

  • Toad in the Hole is a fun variation on a fried egg. Kids love this easy breakfast!



Breakfast Muffin Recipes

Muffins are the perfect choice when you don't have time for a sit-down breakfast. Grab a healthy muffin and a piece of fruit, and you can eat a nutritious breakfast on the run.



Pancakes

Most Saturdays, my husband makes pancakes for the family. We look forward to this weekend tradition!



Other Healthy Breakfast Recipes

Any nutritious food can be a breakfast food. How about a slice of leftover pizza? Some pasta with pesto? A bowl of rice with vegetables? Think outside the box! Here are some more ideas.

  • Apple Cream Cheese Melts are quick to make and fun to eat.

  • Much to my mother's surprise, I have learned to love Homemade Oatmeal! I like to eat it with soy milk and raisins. My children prefer it with milk, maple syrup and dried cranberries. Either way, it's economical and delicious.

  • A Peanut Butter and Banana Breakfast Smoothie is the perfect breakfast when you are in a rush. It's a complete breakfast in a glass! The recipe is in "A Day Of Blender Recipes".
