Lunch Ideas



I am always on the lookout for interesting lunch ideas!



Have you ever gotten into a lunch rut? I have. All too often, I've opened a can of rather tasteless soup, or slapped together an uninspiring sandwich, or grazed on whatever prepared foods I could find in the cupboards.

But that has changed! Now that I have a collection of good healthy lunch recipes,

  • I enjoy my lunches more.
  • I eat healthier food.
  • I feel better than ever.

Here are some of my favorite healthy lunch ideas. I hope you like them too!



Cheesy Lunch Ideas

More often than not, I feel like cheese at lunchtime. Perhaps my body needs the protein, or perhaps it's just that cheese is so comforting and delicious. Whatever the reason, I often reach for one of these easy cheese recipes at lunchtime.

  • An Avocado-Cheese Melt is an easy and quick lunch that looks and tastes as though it came from a fancy restaurant!

  • "Cheese Under the Broiler" is of of my favorite quick meals. This was one of my favorite lunches when I was a child. Now my children enjoy it just as much as I do.


Salads

Looking for a light lunch? A salad might be just the thing! Greek Salad, Maple Coleslaw and Pasta Salad with Tuna are wonderful for lunch.

Sandwiches

Sandwiches, of course, are an obvious choice for lunch. Whether you want a traditional favorite like a Grilled Cheese Sandwich, or something new and different like an Avocado-Salmon Sandwich, visit my page of Sandwich Recipes for ideas and how-tos.



Soup

Not in the mood for soup, salad, or sandwiches? That's OK! There are other possibilities!



Leftovers

Just about any tasty supper can be saved and enjoyed for lunch the following day. Why not make a double batch of Fried Rice, Sweet and Sour Meatballs, or Twice Baked Potatoes? Heat them up tomorrow for a delicious lunch with no extra effort.




Brunch

Having friends over for a late breakfast/early lunch? I have just the things for you to serve!

  • Ham and Cheese Strata is a deliciously filling brunch or lunch entrĂ©e.

  • So is Eggs Benedict.

    Both of these can be made the night before. All you have to do in the morning is put them in the oven and get ready to enjoy a fancy meal.
