Oatmeal Raisin Cookies

This recipe is the best of all the healthy cookie recipes I've tried. It uses healthy ingredients, it mixes up easily in just one bowl, and the cookies are delicious.

It's easy to personalize this recipe. (As you can see from the photo, my family prefers that I put in chocolate chips instead of raisins!)




Check that you have these staples at home

  • in the cupboard

    • vegetable oil
    • honey
    • vanilla
    • whole wheat flour
    • dry milk powder
    • baking soda
    • salt
    • rolled oats
    • raisins

  • in the fridge or freezer

    • eggs

Get out your equipment

  • Essential

    • cookie sheets
    • a large mixing bowl
    • measuring spoons and cups
    • a mixing spoon
    • a metal spatula or lifter

  • Nice to have but not necessary

    • a silicone spatula (for scraping the bowl)
    • wire cooling racks





    The recipe

    1/2 cup/125 mL oil

    1/2 cup/125 mL honey

    1 egg

    1/4 cup/60 mL water

    1 tsp/5 mL vanilla

    1 cup/250 mL whole wheat flour

    1/4 cup/60 mL dry milk powder

    1/2 tsp/2 mL baking soda

    1/4 tsp/1 mL salt

    1 1/2 cups/375 mL rolled oats

    1/2 cup/125 mL raisins

    Preheat the oven to 350F/180C.

    Grease some cookie sheets.

    In a large mixing bowl, put the oil, honey, egg, water and vanilla.
    Beat until smooth.
    Add the flour, milk powder, baking soda and salt.
    Mix well.
    Add the oats.
    Mix well.
    Add the raisins.
    Mix.

    Drop the batter by spoonfuls onto the greased cookie sheets.
    Bake until light brown (about 10 minutes).

    Let the cookies cool for a couple of minutes on the cookie sheets, and then use a metal spatula to remove them to a wire rack or a plate to cool completely.




    Substitutions

    • Use another flour in place of the whole wheat flour.

    Ideas for making this recipe your own

    • Instead of (or as well as) the raisins, try other tasty ingredients like nuts, carob chips, chocolate chips, seeds, or flaked coconut. Experiment with different combinations.
