Egg Casserole Recipes: Broccoli and Egg Supper
Egg casserole recipes are a good choice when you are looking for a healthy quick meal. This Broccoli and Egg Supper can be a filling main dish for two people. It also makes a nice side dish.
Broccoli is full of nutrients - and it tastes great too! I use not only the broccoli flowerets, but also most of the stalk. I cut off the woody end, and then peel off and discard the tough outer skin of the remaining stalk. (The peeled stalk is my oldest son's favorite part!)
3 cups/750 mL broccoli
2 Tbsp/30 mL butter
1 cup/250 mL chopped onion
2 Tbsp/30 mL whole wheat flour
1/2 cup/125 mL water
salt
pepper
3 eggs
2 cups/500 mL grated Cheddar cheese
Preheat the oven to 350F/180C.
Grease a casserole dish.
Steam the broccoli until tender-crisp (about 5 minutes).
Place it in the casserole dish.
In a skillet over medium heat, melt the butter.
Add the onion, and sauté until it is soft.
Add the flour to the skillet. Cook and stir for about one minute.
Slowly add the water to the skillet. Cook until the mixture is thickened, stirring constantly.
Add salt and pepper to taste.
Beat the eggs. Add them to the skillet.
Add the grated cheese. Stir and cook until it melts.
Pour the onion mixture over the broccoli.
Bake until the casserole is firm in the center (about 40 minutes).
